Brioche French toast at Republique LA

I really like French toast. It's a simple dish with few ingredients that reminds me of childhood. You know that scene in Ratatouille where the food critic tastes the dish and is taken back to memories of his childhood with his mom making that particular dish for him? Yeah, that's what French toast sometimes does for me. 

But French toast isn't always great. It's never terrible, don't get me wrong, but sometimes it's just a pretty ordinary plate of food that doesn't quite wow the senses. I order it often but I'm hardly ever impressed (doesn't mean I don't enjoy it though).

But then there's this Brioche French Toast from Republique LA on La Brea. This bread is amazing -- I think it's made in-house and the charred edges (is that the right term?) make this Brioche French Toast not only soft and moist on the inside but a little crunchy on the edges too. Combined with the Vermont maple syrup, it's all I ever really want in a French toast order. It is by far my favorite and most memorable French toast plate ever. I mean, just look at how many words I dedicated to it in this post! If you're in the area, go in and have a bite to eat.
